JTPN: Jurnal Teknologi Pangan Nusantara is a peer-reviewed, open-access academic journal dedicated to the advancement of food science, food technology, and the innovation of agricultural products. JTPN highlights both modern advancements in food processing and the vast, untapped potential of local and archipelagic (Nusantara) food resources.

Scope and Topics JTPN welcomes high-quality submissions that contribute to the scientific understanding and technological development of food systems. The journal’s scope encompasses, but is not limited to, the following key areas:

  • Food Chemistry and Nutrition: Nutritional analysis, functional foods, nutraceuticals, and food biochemistry.
